The tantalizing aromas of Absolute Barbecues or AB’s, India’s first wish-grill restaurant, reach you much before you step into the dimly lit, smoky restaurant. With tables of four quite close to each other and the interior being a large space with muted lighting, there is a feeling of entering a busy American diner. The four counters — the wish grill, bar, dessert counter and main course — are inviting, and the rush of waiters and customers adds to the liveliness of the restaurant. There is a constant buzz of conversation and music, making it upbeat and trendy. At the entrance, there are various barbecue grills on display and sale, in case you want to recreate this experience at home. A smoky aroma emanates from inside as a prelude to the feast to follow.
Food
Absolute Barbecue goes a step further by offering a menu with exotic meats. The ‘wish’ grill is more of a stir-fry counter than a grill and has options like Rabbit, Emu, Quail, Squid, Shark and Octopus. The vegetarian repertoire pales in comparison and features just some bok-choy, bamboo shoots and other staples. Yes, there is paneer as well. The smaller grill on the table has the regular meats and vegetables being cooked on skewers, and some starters are plated and served. The pre-marinated prawns had a fresh smell and it took us a few attempts to get the timing right. The Bamboo Shoots in spicy Jamaican sauce, Grilled Pineapple with cinnamon and honey, and Crispy Corn were delicious. Chicken Baghdadi was our choice for the main course, as it caught our attention with its bright yellow colours; and it had good flavour. We loved the Jalebi and Ghewar Rabdi from the live dessert counter. Other choices included instant ice cream with a choice of toppings and sauces.
Service
Service is quick, polite, friendly and helpful. Starters keep coming to the table in quick succession and the waiting staff is always happy to answer your queries.
The food at Absolute Barbecues can be divided into 5 parts – on-grill options, appetizers, live counters, main course and desserts counter. As soon as you get seated, a grill made of coal is placed on your table. Different skews are placed with different vegetables like watermelon, mushrooms, corn, paneer tikka, pineapple, baby potatoes, cauliflower and broccoli and so many more. The appetizers include Cajun spiced Potatoes, crispy corn, Chili Paneer, Pineapple, Pepper Mushrooms, Veg cutlets among others. The Cajun spiced potatoes and crispy corn were fantastic and reason for me visit Ab’s again and again
When it comes to live counter you can again find plenty of options. We tried food from the tawa counter, chaat counter and the pasta counter. The Tawa counter has a variety of vegetables that can we mixed and match with noodles or rice. Do try and choose your favorite sauce with your option. When it comes to main course these was more than 5 vegetable curries, soup, biryani, 2 dals and plenty of rice/bread options. The dals here are to die for as they are delicious. The corn spinach sabzi was the best among all.
