INGREDIENTS
• 2lbs round eye or roasting protein
• 1/2 cup Southern Comfort Black
• 1/2 cup brown sugar
• 1/2cup soy sauce
• 1/2 cup oyster sauce
• 3 tbsp Worcestershire sauce
• 1 tbsp smoked paprika
• 1 tbsp blackened
• 1 tbsp onion powder
• 1/2 tsp garlic powder
• 1 tbsp freshly ground black pepper
• 1 tbsp red pepper flakes
• 2 poblano peppers
• 2 chili peppers
• 1 jalapeƱo pepper

INSTRUCTIONS
• Slice meat in thin slices, 1/8 inch. Set aside.
• Make the marinade: In a medium bowl, Whisk all dry and wet ingredients until evenly combined. Be sure to mix well.
• Put all peppers over an open fire until charred (you can also roast in open at 400 degrees with oil rubbed on peppers)
• After charred but in zip lock bag for 5 minutes. Take out and rice under water till skin falls off. Put in blender and add to all mixed ingredients until fully incorporated.
• Return to medium bowl (or ziplock) and add meat. Cover for 12 hours.
• Line two sheet pans with aluminum foil for easy clean-up. Place a wire rack over each pan.
• Preheat oven to 175°F and set in center of your oven.
• Place meat on the wire racks in a single layer. Place in oven and be sure to rotate and turn until the meat is dried out, about 3 to 4 hours. Make sure it is fully dried out and store in sealed containers or bags - and enjoy!
